Thanks again! It seems like it may be my hosting that is causing the problem. I'm getting PHP Warnings in the log relating the the ini_set() being disabled. This seems to be prevents the plugins fro installing automatically.
I've asked my hosting provider if this is being blocked on the server, although I'm thinking MoodleCloud may end up being the way to go...
