Hi David,
The only thing I can come up with, is that you entered most of your course data in the Course Description field, and not in the actual course. The course description field use normally used for a summary or short descriptive text of what to expect in the course.
Once saved, you should enter a blank course page with n topics/weeks that you can edit.
Now to remove the Moodle footer
Try adding the following CSS in Advanced Settings, RAW SCSS.
