How can I collapse all topics?
I want my Moodle pages to be really neat and clean, minimalistic

If you are able to install contributed add-ons, you can try the Collapsed topics course format

Now I need to work out how to make my course sections fonts smaller. ;@)

David, In addition to Mary's comment: make sure you are using single section view. I'm not exactly sure what you mean by collapse all topics. I'm assuming you may have all topics on one page.

If you are wanting a minimalistic and clean view, you may like to consider Fordson theme https://moodle.org/plugins/theme_fordson plus course menu plugin.
