You could in fact register them ahead of time with a CSV upload and protect the course where the quiz is with an enrolment key. Then you just give them the enrolment key on the day.
Alternatively, allow self registration into the course with the quiz and on the day they need to do it, enable email based self registration so they can create their own accounts and then enrol themselves into the course.
