There are a number of capabilities such as 'Change course category' (moodle/course:changecategory) and 'Change course summary' (moodle/course:changesummary) which are allowed for the default role of teacher. If you edit the role of teacher (via Define roles in the Site administration) and unset these capabilities, then they will no longer appear on the edit course page for teachers.
