There is a plugin called configurable reports that makes it a little easier but you still need to be familiar with the database. Without the time to gain that knowledge, sadly, you will need to export individually from each course.
Next time, if you are using the same survey in multiple courses, create it on the front page and then send it to the courses (there is a feedback option for that). That way, I think you will get all the answers in one place.
