I am wanting to add a 'checklist' activity into my moodle site where students can indicate they have completed certain activities ... It seems like the checklist activity option is not inbuilt in the free Moodle site - is this correct? and any suggestions? (I guess I could just do a short answer question?

The Checklist activity is not available on a free MoodleCloud site. However, it is available on School sites which your free MoodleCloud site is eligible to upgrade to. See https://www.moodlecloud.com/ for more information or log into your portal and click the 'Change plan' tab.
