Have had a good look in assignment settings but can't seem to find a way to stop students deleting/removing their assignments once they've submitted
Make them use the submit button to submit. Limit to one attempt. Do not allow automatic reopening. (Make sure you are testing as an actual student account to verify, not as an admin.)
