We set our gradebooks to Natural and our courses are all out of 2000 points. I excused (excluded in the override section) a kid from a 50 point project, but I'd like to find a way in Moodle to make his gradebook show 1950 points total for only him when he looks at his user report (50 less than everyone else). Is there a way to 'exempt' a specific kid from an assignment and have the gradebook reflect this for a single kid?

So apparently it wasn't working because the 50 point assignment I wanted to exclude was an extra credit assignment and therefore had no effect on the course total to begin with. So excluding a different assignment yielded the expected result.
