As Daniel said, you need to decide how long you need to keep the data. E.g. you might been an archive of past quiz results, in case the student questions their grades later.
There is no automated process to remove old quiz data. (Perhaps we should make one?) The easiest way to do it manually is probably using Course administration -> Reset, to delete all the quiz attempts in certain courses.
