I've managed to spot how to do this in theory. The 'link to next activity drop down in the 'Appearance' settings for a new lesson will allow me to link to the Course Feedback activity. The problem is, that this only works with a lesson activity in any part of the site except for lessons created as part of courses. Whenever I create course, then try to add a lesson as part of the course, the 'link to next activity' option just isn't there. As I'm nesting my lessons within the course structure, it's important for me to be able to access this feature.
