If you want to rename the module, it is not so simple, as in requiring to go into the module code, creating upgrade issues in the future. If that is not what you mean, please tell us what you want to change where more exactly. Generally, you go to the language customization, select language, then select the file to customize and peck at it. The quiz module will have its own language file. Word quiz will be repeated there many, many times, so this will be tedious.
