Is it possible to just make the Dashboard page show ALL a user's courses when it opens? Having it only show 20 or so, and the user need to click a link to see the rest, is a real nuisance. I expect code hacking to be involved.

You can change the default number of courses shown so that all ares shown from Site administration>Blocks>Course overview>Default maximum courses and you can also 'force maximum courses'. Then if you reset the default dashboard block to always show all courses, students should see all their courses.
