non mi pare esista una risposta "core" per la tua esigenza, ma solo approssimazioni, prova a verificare se una delle seguenti può andare bene.
- installare il plugin Email-based self-registration with admin confirmation (questo però introduce uno step di "approvazione" di ogni account creato da parte dell'amministratore)
- installare il plugin Message provider, che fa esattamente quello richiedi (ma è vecchio di 4 anni ed è un "local plugin", è testato solo fino alla v 2.5
- [NON CONSIGLIATO] provare a vedere se funziona l'hack descritto in questo thread https://moodle.org/mod/forum/discuss.php?d=92958 (si tratta di aggiungere una linea di codice a un file di programma di Moodle, da provare solo dopo un serio backup e solo se si sa davvero dove e come mettere le mani); aggiorno le info rilevanti per Moodle 3.1
- la funzione send_confirmation_email si trova alla riga 5969
- il testo da aggiungere in una nuova riga prima di
return email_to_user($user, $supportuser, $subject, $message, $messagehtml);
dovrebbe essere email_to_user($user, $supportuser, $subject, $message, $messagehtml);
Tutti i metodi di cui sopra non li ho testati, quindi procedi con estrema cautela.

Ciao Paolo,
grazie mi hai salvato, adesso però ho un altro problemino, l'email di conferma è in inglese e uno sproloquio infinito di frasi che vorrei stringere (alcune non hanno senso nella mia situazione). Ho cercato nel language pack come fare a modificarlo ma nada, mi riesci a dare una mano?

Come vedi molto ma molto lungo ed inutile, vorrei solo un "Grazie per esserti registrato, buon lavoro!" ... ecco una cosina semplice, ho anche provato a vedere se cè nel language pack inglese, ma non lo trovo.

ad occhio, questo NON è il testo di conferma inglese di default
Se lo fosse, dovresti comunque scegliere il language pack Italiano in ► Amministrazione del sito / ► Lingua / ► Personalizzazione lingua, selezionare il file "moodle.php" nella sezione "core" e poi cercare la stringa "emailconfirmation". [ vedi https://docs.moodle.org/31/en/Email-based_self-registration#Email_confirmation_message ]
Arguisco che tu abbia postato il testo di default di uno dei plugin che ti ho segnalato nella vecchia mail (tra l'altro sembra il testo di benvenuto allo studente, non quello della mail di avviso al docente/admin).
Come scrissi, non ho mai utilizzato quei plugin e non posso indicarti una soluzione precisa, ma sospetto che il plugin -o la sua documentazione- contenga le istruzioni per modificare il testo di default (ed anche inserire del testo appropriato al posto di "my organization" eccetera).
