Does anyone know if it is possible to export data on rubric-based assignments beyond the final grade? In quizzes we can see all sorts of data for overall grades and for each quiz question. I think it would be really valuable to see how the class did on a particular section of the rubric, especially when planning future classes or remediation.

I agree with Kathleen -- it would be a great feature to be able to analyze Assignment results by each rubric criteria level. Does anyone know of a plug in that would do this kind of analysis?
I created a suggestion Moodle Tracker (MDL-52415) based on your question because I think it's a great suggestion that would benefit teachers.
This could be a vital feature for the education world as everything is about 'data driven instruction' and what better way to get data than to analyze the rubrics at-a-glance : )

then you can click on a link (such as the red text) to get to either a CSV report, or a page display the breakdown:
And here's my suggestion of what the breakdown could look like:
Each row should total to the number of submitted assignments (though my second row is off by 5 submissions).
So at a glance, I can see I need to work on the "submissions" criterion with my class as it has the most number of students at the middle level.
Would love to hear other teachers' thoughts.
