This is the css file I use for our moodle mobile customisation. It has some settings for 2.x and 1.x as the Windows 8 version is still v1.
There are heaps of customisations you can do by playing with the 'Inspect Element' or Firebug tools in your browser if you visit http://prototype.moodle.net/mobile/moodlemobile2/
Add the selectors and settings to your css file and away you go.
Note: with the official Moodle Mobile App, you can only modify what it looks like after you've logged into your site (ie. can't change the start up screens).
