Is it possible to mirror Moodle on 2 servers??
What would each server need for mirroring to accur correctly??
Would folder structure and placement of folders be crucial??

Mirroring the moodle files and the data files is pretty easy ... I would use 'rsync' for this on a Unix box.
The slightly tricky bit is replicating the database well. Best way would be to use the proper tools for it: http://www.mysql.com/doc/en/Replication.html
