My feelings about any updates to software is only do it when a problem arises. If your Moodle (or any software) does what you want, the only updates you need to apply are those relating to security. As you progress with Moodle, you may try to use a function that doesn't work correctly. If the release notes refer to a fix for your problem, update.
Some major updates (1.5x to 1.6.0) should be tested on a local server before updating a live system.
Updating for updating sake serves no purpose.
