If possible, I would like to have a wiki for our Moodle site that can be seen directly from the "My Home" page, without having to enter a class. Is that possible? If so, how?

I don't know a way to do it on the My Courses page.
Don't know if this will help. You can however put one on the front page and set permissions for the Wiki to allow "Authenticated user for front page". I have done it on the front page of my 2.8 Moodle.
