Actually, that made me think that embedding the video via a filter might be a good alternative to hacking the workshop source code. Elizabeth, you might want to ask your Moodle administrators to consider installing a plugin like Video Easy. It has been written by the author of the PoodLL and the Generico filters that AL recommends above. It would allow you to define custom HTML templates that turn plain embedded video into the real HTML5 tag - i.e. what you normally do manually.
