If you jam "mysql.so: undefined symbol: php_sprintf" into Google, there are quite a few similar reports - although no obvious resolution. This very much seems like a php configuration issue... where did your PHP come from? Is this part of a distro or did you build it yourself? Have you checked for updates? Are you using a stable version?
