We keep the contents of our moodledata folder on another (windows) fileserver, and simply mount the share in there using samba. This would work locally too, using a symlink, or the linkd utility for NTFS reparse points if your webserver runs Windows. Just make sure to check your permissions, and that you're not opening any security holes. We also had to play with the config of SELinux and our network IDS a bit to get it working.

This could work over the internet using NFS/SMB over a VPN between two servers. Haven't tried it though, and its likely to be slow! smile
