After upgrading to 2.8 our quizzes are looking like this now.
How do we fix this?
Hi Rob,
It might be helpful to know what version from which you were upgrading and which was working last. It seems you have the TeX filter enabled. I would be helpful to look at the admin settings page for TeX filter and also the texbug page that will appear if you click the code links while logged in as an administrator.
I think that the location that binary paths are stored in the database was changed a few versions ago and they may not have been copied correctly. So I would check the settings page first to make sure the entries are filled.

... or if no TexLive/MikTex etc is installed the mimetex binary file in folder filter/tex might not have permission to execute
