Hi Kimber,
Essential V2.8.1.4 has not been released yet and has not been tested for production servers.
Essentials config.php file has the instructions in the same place as 'parents_exclude_sheets' you mention for the Essential settings.
Essentials is a bare bones theme where you can apply standard theme development techniques to add such components as docking.
