Having spent a time customising our version of the app, which is a very steep learning curve!!!
I have everything working as it should except i can't find where i need to rename the push notification that the mobile phone receives (which is shown on the handset).
Can someone please point me in the right direction? which file and which line please?

Maybe I should change that with a generic name, something like.. "Notification", what do you suggest?

I think you maybe right to rename to 'Notification'. This would make it easier our you could just post how to create your own air notifier from scratch
With many people now customising your fantastic work it would be a shame only for it not to show the complete customisation.
i have customised the app for my organisation replacing the icons etc and renaming to WMFS Ecademy only for the push notification to come back as Moodle Mobile with my icon.
I personally don't mind that but my managers will

The quick fix is change the name for the english word "Notification", note that this may sound strange for people using the application in different languages
