Is it possible to hide the teacher's name from the student?

I am not sure why do you want to hide the teacher's name.
If the teacher is a boss and want to peer a course content secretly, you can assign he/her to a system role. You set the system role to access any course, then you don't have to enrol the teacher to the course and the teacher won't be displayed in the participant list.
I need it for cases where more than one teacher is giving feedback and I want that the student won't know which teacher gave which remark
In which module you want to give feedback? Assignment? Quiz?...
Sorry, I think it is not easy. I believe Moodle does as any other CMS, register every single activity to the user.
Hope someone else can give you some ideas.
