I would like to use the gradebook and only see activities which are set to visible instead of seeing every gradable activity in the course. Is there a way to only show selected or certain activities in the gradebook?

You can hide hidden items completely in the user report (Grades>then click the dropdown and select Course Settings - it's in the bottom section).
For your own viewing, you could pull all of the invisible gradable activities into one category; then you can collapse the category in your grader report (essentially hiding it from your view).
