Hello,
We are using Moodle 2.6.2 and Grid Format version 2014032800, currently we are unable to delete images once they have been added to the grid format. When clicking 'Change image' then changing Delete Image to 'Yes' and clicking Save Changes nothing happens and we are taken back to the course page and the image is still there. Any ideas on this one?

From that version number you are running version 2.6.1.5. An issue was reported along the same lines in CONTRIB-5106 and fixed in 2.6.1.7, therefore please upgrade the format to the latest for M2.6 being 2.6.1.9: https://moodle.org/plugins/pluginversion.php?id=6704
