Hi Juan,
1) You'll find the print icons in your Admin block (under Book Administration).
2) To add a new chapter "Turn editing on" via the Admin menu and you'll see an "Add chapter" icon in the "Table of contents" block (assuming your role lets you administer Books ;) )
