I was just wondering if there are some really good example of Moodle site designs that are accessible to the public.  I feel that I have hit a wall with what I can do with Moodle and would love to peak into other courses to see what other people are doing?

Yes, The OpenScience Lab is a combination of a custom theme and a custom course format. (The whole site is basically one course). It is a work of genius/madness by sam marshall.
