Global variables and settings documentation

I'm a newbie Moodle developer (though long-experienced in PHP and whatnot), and am working through the blocks tutorials. I'm getting a bit 'lost in docs' trying to find out where various variables and settings are defined and documented. I can see that some are defined in core PHP scripts, but it would be really useful if I could bookmark documentation on:

  • Moodle global variables ($CFG, $USER, etc)
  • Moodle settings (eg Allow_HTML)

Could anyone point me towards these, if they exist? I'm on v2.6 the now.
