I have seen courses of a practical nature, for example, about photography and neuropathology, which focus on application of skills and inclusion of associated information, facts, stepped-instructions for knowledge development. Hope these elements compare with your purpose. If so, then such courses have utilised the regular glossaries, forums and feedback items...with feedback used for evalutions, introductions/getting to know each other type purposes and to share factual info.
Activities have often used a sequenced approach, such as lessons where students can provide narrative accounts of topic related engagement in their setting or studio/lab whatever, with pictures uploaded to databases also.
Lessons have also included stepped-explanatory instructions where the facilitator has included flash presentations, at times, too. The quiz feature has been used to enable students to consolidate knowledge and understanding (formative)....and for summative assessment purposes among other uses.
A portfolio type assignement can also be included....using the database function-simple word docs can suffice with text and pictures if need be.
In terms of resources, as well as the facilitaor uploading video clips, students can also upoload their own resources/video and I think audio too.
