i am creating a book which has several chapters inside and i would like to hide some of the chapters so that students can only see them as they click NEXT and not appear on the table of contents.

This is not possible without tweaking code. You will need to add a new flag to the chapters table for this and then take appropriate actions while generating the TOC and display.
