Randomizing an Essay question in Moodle Quiz

I have created a quiz, and my intent is for the Quiz to consist of one Essay question.  I have a number of different topic choices for that one question, with the idea that each time a student accesses the quiz, he or she will get a random essay topic.  (For example, if I have 10 students logging in at the same time, they will not all get the same topic.)  

I used the "Shuffle randomly" selection in the "Question Order" tab under "Layout" in the Edit settings.  My question bank currently has 3 essay topics in it.

However, I am finding that when I preview the quiz, it allows a student to see all my possible essay topics by clicking the "Next" button at the bottom of the screen. I'm assuming that each of my topics is being treated as a separate question in the quiz, which I do not want.  I just want one question only (just not the same one for each student).

Could somebody please help?  Apologies in advance for my lack of technical expertise.
