I'm looking for a plugin that will enable me to track a student's activity at different courses, this means I'm able to see what he's done at all the courses he's taking. Is there anything like this?

There is the configurable reports plugin that allows you to create reports that span the entire system.

I've seen the description of the plugin and it says " Users reports, with information regarding users and their activity in a course." so it says "activity in a course"; do you know if you can enlarge the report to all the courses of one student?
Yes you can. It is basically just a way of creating reports through the database directly.
