Assignment

I am looking for a way to open quizzes and/or assignments that have a set date for individual students after that date has passed. My situation is this: I set due dates on my quiz/assignments and if a student misses that deadline..I would like to be able to re-open that quiz and/or assignment just for that student. I do not want to re-open it for the entire class just by changeing the original date set. Is there a way to do this? Thanks in advance for your help!
