I am sorry I missed your post.
As far as I know it is now possible in moodle to define the user registration page to contain the fields that you require. Even if it were not possible (I think it is), then the user registration page is quite easy to hack, as I have been doing for some years, such that students/uers only supply a minimum of information. So if global anonymity is your objective, then it can be achieved in this way.
I would like to have anonymity in some forums - particularly those where I seek student criticism for instance - but not globally.
