You can manually type the characters to make emoticons eg- : - ) creates ; - ) creates
etc. For displaying characters as images you have to enable the filter " Display emoticons as images" from settings > Site administration > Plugins > filters > manage filters. Then also enable it for the course from Settings > Course administartion > Filters.
