I am running Moodle 2.2.2 (Build: 20120312). I am also fairly new to Moodle and don't know my way around very well.

I have just updated the Certificate add-on, going from 2012022001 to 2013021200. I am trying to locate where to change some of the text that gets generated onto the certificate.

I found Site Admin > Plugins > Activity Modules > Certificates, but it contains only an image upload button.

Are there other settings panels that I am missing? Is this something I have to change directly in the PHP files of the /mod/certificate folder?

have you read the documentation?

I used the documentation to set up my certificate and have not had to change it in a long time. See "changing printed text" and "adding text". It seems complicated to set up, but is not that difficult and once you have it set up you don't have to do anything else.
