I'm looking for a way to let students pick topics for a task from a predefined list (say, students shall create demographic-pyramids for different countries). Basically, once a topic has been picked by a student, it should be disabled for the others.
Is there a way to achieve this or something similar in moodle?

It depends on how detailed or interactive your topic list is. If you just want to give them an instruction to do something and to choose from a simple list - and then they go off and do it - then the easiest way is to use the Choice module. Set the limit on each choice option to 1. Then once one person has chosen a task from the list, the others are not able to choose it. But obviously as I said, this depends on exactly what the tasks involve.
