Is there a way to link to an assignment submission page in a lesson, send the student to that assignment page and then link back to the lesson, so the student can then continue with the lesson. I have surveys that I want student's to fill out and submit and then return to the lesson to analyze these surveys as an essay in the lesson. It would look very clean if everything could be in the lesson.

I'm afraid what you want is not possible. You want to "mix up" Lesson, "survey ?" and Assignment in a way that is far beyond the possibilities of Moodle.
