I don't want to allow all students to be able to retake the lesson; however, I have one student who had internet issues and I would like for her to be able to take the lesson again. If it was a quiz, I would simply delete her attempt and she would be allowed to retake it, but when I try the same thing in a lesson, she is not allowed to retake it. Is there any way to fix this without allowing all students the opportunity to retake the lesson?

I don't understand your problem. You certainly can delete students' attempts in the Lesson activity, so they can try again.
