Now that we are close to the release of the new Moodle Mobile app  I've created some docs about the general architecture and how to develop plugins:

Is there anywhere to see what it looks like in action (e.g. a video/animation)?

Unfortunatelly, there is not public server for testing.

This is a static html demo we did for the Moodlemoot spain that shows the design for tablets

Great news! Will your app be IOS or Android specific? Also, will it support CAS ?
