I need a format with topic format with Start and End Dates (and possibly n of days for each topic).
Weekly format doesnt work as i do not want to repeat topics. Some toics run for weeks and some for 2 days.

Just use the standard topics format with condidtional topics as shown on https://moodle.org/mod/forum/discuss.php?d=214602 and name the topics accordingly.
