1. Can students start a lesson and then save their responses to complete the lesson at a later time?

Yes and No. There is really no "save and resume" option in the Lesson interface. However, if students leave a lesson before its end, e.g. by clicking on the course's home link, when they attempt the same lesson again, they are presented with the following message:

You have seen more than one page of this lesson already.
Do you want to start at the last page you saw?

2. Is there the option to have a 'skip a question' button so students can move on to the next question but return to a question in the same session?

No. There is no way to "skip a question". If the Lesson is set to Flow control/Allow student review, once the students reach the end of the lesson, they are offered the option to "Review lesson". Unfortunately, the students can only view their answers, not change them.

3. Is there the option for students to print their completed lessons for future reference, using the completed lesson as a revision tool?

No.

4. Are these settings similar to Moodle quizzes i.e. can alter the fields so that students can only see their grades once the whole cohort has completed a lesson or once the student has reached the maximum number of attempts they can see their mean score and the correct responses?

No idea.

5. Are student's responses saved anywhere in Moodle so they can view them online after the attempt(s)?

Unfortunately not.

6. Is there the option to upload a document that students can view once they complete a lesson and receive their feedback?

Yes, sort of. If you are using Moodle 2, as with any other activity, you can use the Conditional activities feature to make that "document" available upon completion of a Lesson.

I'm afraid most of these answers are negative, but, although the Lesson activity has many interesting features, it does not have all those nice features that you would like to see and which are to be found in the Quiz activity only.
