I would like to know if someone knows if there is a plugin that exists that tracks a student's "lifespan" since his first enrolment. This means that is tracks all the courses since first regestered that he has been enrolled in and out of.
Be great if someone can point me in the right direction here.

I don't think there is any plugin for that kind of report, howvever I guess the functionality can be customized.
You can always contact Moodle partners and one I know is Ballistic Learning for any kind of customization if you require in Moodle.

To find out the list of users by course enrollment simply use this sql script
