We are a small training organisation, and are projecting about 300 students over the next 12 months.
1: A company site using Wordpress
2: A Moodle site, with probably never more than 30 concurrant users.
3: Video will mostly be hosted in a YouTube channel
4: Email will be taken care of by Office 365
I don't really want to over subscribe on a dedicated server if we dont need one, for personal sites in the past I used VPS as they allowed me to scale easily, but just curious what you guys are using.
I can imagine based on running Moodle on my laptop it is rather RAM hungry.

You didn't mention the platforms you are familier with. If Linux, a VPS should be enough.
Yes, Moodle is ressource hungry, but the load you expect is not high. If the demand grows rapidly you can always migrate to a dedicated server. http://docs.moodle.org/en/Moodle_migration.
Sorry should have said I will be going managed linux based server.
We plan on using Office 365 for the video conference and digital whiteboard capabilites too reducing the load on our server even more.
