This should be sufficient but I always include user data in my course backups. This way, if you just lose one course or a teacher deletes something vital by mistake, you can restore just that course with user data very easily. I have also had instances where I had to restore a three year old course to verify a grade. I could not have done that without having the user data in the course backup.
