OK...the problems you have can be remedied quite easily. First of all the document/s you linked to from your custommenu would have been better as standalone pages created from the frontpage Main menu, which is a block that can be hidden afterwards. This then will stop anyone seeing the breadcrumb trail to your Moodle site's 'inner sanctum', so to speak.
The information page would just be a normal Moodle page not a course page as such just a page that contains all the information you want people to access as a guest.
Guests cannot see courses you don't want them to see. So making categories visible to guest is not recommended unless that category is a top level category for guests only or for guests and registered users.
Same goes for Students. These should only be able to see what they have enrolled into.
On the other hand you can have courses listed on the frontpage with minimal info visible for anyone to see.
Getting back to the breadcrumb problem. Depending on which theme you altered, will depend on which theme is selected. All I can tell you is the theme you have selected is not the Afterburner theme. So perhaps that is why your changes are not visible.
