The catagories and items view in moodle 2 grade book allows you to move around and group activities together which should allow you to put some order on the grades like grouping common activities under a catagory so you can expand and collapse them as 1 unit but as for actually automatically sorting by latest activity I don't know enough about grade book to say if thats possible
